Feels like a Monday today 😴 Trying to keep my energy up with this super smoothie & a few workouts today!
▫️1 cup Baby Spinach
▫️1/2 container Plain Greek Yogurt (@siggisdairy)
▫️1 Frozen Banana
▫️1/2 cup Coconut Water (@vitacoco)
▫️1 tbsp Chia Seeds
▫️1 tsp Matcha Powder (@ujidomatchatea)
▫️Handful of Ice
Blend everything together! Top with chia seeds & your favorite fruit 😋 I chose some frozen raspberries!🌯 Spicy Sweet Potato Wraps

Decided to try the burger patties I made with some wraps just to change things up! And I absolutely loved it 🤤 These patties are delicious & honestly, they taste good with anything, even by themselves! Give it a try!
Patty Deets👇🏼
▫️1 medium Sweet Potato
▫️1/2 cup Tricolor Quinoa
▫️1/4 cup Green Lentils
▫️1/2 Jalapeño, finely chopped
▫️1 tbsp Whole Wheat Flour (@bobsredmill)
▫️1 tbsp Olive Oil
▫️2 tsp Crushed Red Pepper
▫️1 tsp Chili Powder
▫️1/2 tsp Garlic Powder
▫️1/2 tsp Smoked Paprika
▫️Salt & Pepper
▫️1/2 Cup Panko Breadcrumbs
First, preheat the oven to 425°. Then, wash the sweet potato & poke with a knife. Line a baking sheet with foil & roast in the oven for roughly 45 mins.
Meanwhile, cook the quinoa & lentils in 1 1/2 cups of water.
Once those two things are cooked, in a bowl, mash together the potato & quinoa. Add in the following ingredients- jalapeños, flour, olive oil, & seasonings. At the end, mix in the breadcrumbs.
Using a 1/2 measuring cup, scoop out the mixture & place on a baking dish with a slightly greased parchment paper. Shape into 5 patties. Bake at 350° for roughly 40 mins, flipping halfway.
Store them in the fridge or freezer & heat up in a pan right before eating! 😊

For my wraps, I used the Garden Spinach Wraps by @missionfoodsus. I added some mashed avocado, sautéed spinach, the patties sliced, chopped tomatoes, & some shredded cheese. I then used some parchment paper to wrap it up for easy eating!🥜 Crunchy Peanut Butter Cups

Having dessert before making dinner tonight...oops 🙈 Hey that’s the best part about adulting! Eating whatever I want, whenever I want 😋 These peanut butter cups really hit the spot & I had to seriously tell myself to stop eating them! Swipe to see them in all their glory 🤤
Chocolate Layer:
▫️1 1/3 cup Cacao Powder (@guittardchocolate)
▫️1/2 cup Coconut Oil
▫️2 tsp Vanilla Extract
Peanut Butter Layer:
▫️1/4 cup Crushed Peanuts (some for topping)
▫️1/2 cup Peanut Butter (@jifbrand)
▫️2 tbsp Coconut Oil
▫️1/4 cup Honey
Chocolate Layer: In a bowl, mix together ingredients. Microwave for 30 seconds. Using a tbsp measuring spoon, scoop out mixture & pour into muffin cup liners. Save the remaining for the top. Pop the muffin tray in the freezer for 15 mins.
Peanut Butter Layer: In a good processor, chop the peanuts until roughly crushed. Take out the muffin tray & sprinkle a little of the peanuts over the chocolate later. Next, mix together the ingredients for the PB Layer. Microwave for 30 seconds. Using a tbsp measuring spoon, scoop out mixture & pour into muffin cup liners. Make sure to use up all of it! Pop the muffin tray in the freezer for 15 mins.
Layer again with the chocolate using the same tbsp measuring spoon. Freeze this time for about an hour. Once ready to eat, top with the remaining crushed peanuts & some sea salt!

Tried out this new recipe for dinner last night & I was pleasantly surprised 😋 Eating the rainbow 🌈 & all the right Thai flavors. Hope you guys are having a wonderful Friday✨ Yay for short weeks ❤️
▫️1 head Cauliflower
▫️2 boxes Squash Spirals (@veggienoodleco)
▫️Purple Cabbage, shredded
▫️Carrots, shredded
▫️Bean Sprouts
Flour Batter:
▫️3/4 cup Whole Wheat Flour
▫️1 tsp Baking Soda
▫️1 cup Almond Milk (@lovemysilk)
Thai Sauce:
▫️1/3 cup Soy Sauce (@kikkomanusa)
▫️1/2 cup Honey
▫️1/4 cup Tahini (Prince World’s Finest)
▫️2 tbsp Sriracha (@huyfongfoods) ▫️1 tbsp Sesame Oil (@kikkomanusa)
▫️1 tbsp Rice Vinegar (@kikkomanusa)
▫️1 tbsp Cornstarch
▫️3 cloves Garlic, chopped
▫️3 tbsp Ginger, chopped
Start off by preheating the oven to 450° & cutting the cauliflower into florets. Rinse them in a colander.
Batter: whisk together all three ingredients. Then add in the cauliflower & evenly coat everything. Transfer to a parchment-lined baking dish (be sure not to transfer any excess liquid). Bake for roughly 20 mins.
While that is baking, transfer the veggie spirals to a colander & sprinkle with some salt. Use your hands to evenly mix it. Let it sit for 20 mins - this will help drain out any extra water. Then, use a towel & wring out all the water. Transfer back to colander & separate the noodles.
Sauce: Mix all the ingredients in a medium saucepan & stir on low/medium heat until the sauce starts to thicken. Set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Once the cauliflower has cooked, transfer back to mixing bowl & add in about 2/3 of the sauce. Evenly coat the florets, transfer it back to the baking dish, & let it cook for another 20 mins.

To serve: Add noodles, cabbage, carrots, sprouts, & Thai cauliflower. Drizzle on the remaining sauce & top with sesame seeds. Yummm 🤤

Waffle Deets👇🏼
▫️1 large Egg
▫️1/2 cup Plain Greek Yogurt (@siggisdairy)
▫️1/2 cup Unsweetened Almond Milk (@lovemysilk)
▫️2 tbsp Coconut Oil
▫️2 tbsp Maple Syrup (plus more for serving)
▫️2/3 cup Whole Wheat Flour
▫️3/4 tsp Baking Powder
▫️1/4 tsp Baking Soda
▫️1/2 tbsp Cacao Powder (@guittardchocolate)
In a mixing bowl, add in all the wet ingredients first - egg, yogurt, milk, oil, & syrup. Then add in the dry ingredients - flour, baking powder, & baking soda.
Then pour out about half the batter into a second bowl. Add in the Cacao powder & mix.
Turn on the waffle iron & spray the top & bottom with cooking oil. Pour both batters at the same time onto the waffle iron, swirling them around.
I topped my waffles with some almond butter, berries, maple syrup, & powdered sugar.

🍝 Spaghetti & Zucchini Meatballs
⏲ 15 mins Prep Time | Yields 5-6 “Meatballs”
Really needed to use up my zucchini before it went bad so I decided to make some spaghetti with zucchini “meatballs”. It adds a nice crispy twist to regular old spaghetti & just tastes so good! Monday’s are hard but I’m feeling good after this meal✨ Ready to grocery shop 🛒
Meatball Deets👇🏼
▫️2 Zucchini
▫️1 1/2 tbsp Egg Whites
▫️1/2 cup Panko Breadcrumbs
▫️2 tbsp Olive Oil
▫️1/4 Onion
▫️1 clove Garlic
▫️Salt & Pepper
Preheat oven to 375. Using a grater or mandolin sliced, grate the zucchini. Add some salt & let it sit in a colander for roughly 20 mins (this will drain any excess water). Then use a towel to squeeze out the remaining water & transfer into a mixing bowl.
Add in the remaining ingredients & mix everything together. Using your hands, form small golf-sized balls & place in glass baking dish.
Cook the zucchini meatballs for roughly 45 mins (or until crispy & brown), flipping halfway.
Serve with whole wheat pasta, roasted garlic pasta sauce, Italian seasoning, Parmesan cheese, & red crushed pepper!

Celebrating #ToastTuesday with some delicious sweet & savory sweet potato toasts 😋
Sliced sweet potato, toasted in a toaster on the highest setting twice (flipping the second time). Toast 1 - smashed avocado topped with cherry tomatoes, red crushed pepper, salt & pepper. Toast 2 - almond butter (@justins) topped with sliced bananas & hemp seeds. Toast 3 - roasted red pepper hummus (@sabra) topped with sunflower & pumpkin seeds.

Everyday this week so far, I’ve been trying to cook up all the food that’s close to going bad in my fridge 😅🤷🏽‍♀️. Had some poor bruised bananas that I thought about freezing them for smoothies but then waffles sounded so good 😋 So here’s a simple, healthy, little messy, banana waffles recipe to celebrate #WaffleWednesday! (Plus it’s so much fun using my mini waffle maker by @unprocessyourfood)
Waffely Delicious Deets👇🏼
▫️2 ripe Bananas
▫️2 Cage Free Brown Eggs
▫️1 tsp Cinnamon
▫️1 tsp Vanilla Extract
▫️1 1/2 tbsp Almond Flour (@bobsredmill)
▫️1/2 tsp Baking Powder
▫️1/4 tsp Baking Soda
Strawberry Syrup Deets👇🏼
▫️4-5 Strawberries, cubed
▫️1/2 cup Water
▫️2 tbsp Stevia
▫️1/2 tbsp Cornstarch
For the waffles, blend all the ingredients in a food processor or blender. Pour into a waffle maker & cook accordingly.
For the syrup, add everything to a pot & bring to a medium boil. Stir frequently until it forms into a thick syrup.
Start to stack the waffles. Every 2 waffles, I added some maple syrup, almond butter (@justins), plain Greek yogurt (@siggisdairy), & the strawberry syrup. Continue until you reach the top! Added some blueberries as well 😋

It’s all about the breakfast this week! “Meal prepped” (on a Thursday 😂 hence the air quotes) these egg cups which are perfect to store in the fridge/freezer & eat throughout the week for a quick breakfast. It’s Thursday guys, so close to the weekend with Beyoncé 💃🏼
EGGcellent Recipe📝
▫️1 small Sweet Potato
▫️4 Cage Free Eggs
▫️3 tbsp each for 5 Egg Whites
▫️1 tbsp Olive Oil
▫️Shredded Cheese
▫️Salt & Pepper
▫️Cherry Tomatoes & Avocado
▫️Onion & Spinach
Using a grater or mandolin sliced, shred the sweet potato. Then in a bowl, mix together olive oil, shredded cheese, salt & pepper. Divide into 9 muffin tin cups & press the mixture down to the bottom. Bake at 400 degrees for roughly 15 mins.
Meanwhile, chop up all your veggies. Once the sweet potato has baked, add in the desired veggies to each.
Now time to add in the eggs! I try not to eat too many whole eggs a week due to the yolk being high in cholesterol, so I used a combination of egg whites & whole eggs. So I’m random cups, I added the egg whites & in the rest, I cracked in a whole egg. Again, bake at 400 degrees for roughly 15 mins.
