🥜 Criss-Cross Peanut Butter Cookies

Only 5 ingredients required for these babies & they are just oh-so delicious 😋 So easy to make & bake!

Recipe📝
▫️1 cup Peanut Butter (@justins)
▫️3/4 cup Rolled Oats (@bobsredmill)
▫️5 Dates, pre-soaked
▫️1 Cafe-Free Brown Egg
▫️2 tbsp Honey
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Chocolate Coating (optional) -
▫️1/2 cup Chocolate Chips, melted (@enjoylifefoods)
▫️Coconut Oil
▫️Sea Salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 350°.
In a food processor, add in the oats & process until fine & flour-like. Set aside in a bowl. Then add in the dates & pulse until they are evenly chopped. Add the oat flour back in as well as all the remaining ingredients (excluding the “optional” ones).
Then use a 1 tbsp measuring spoon to scoop out the batter & roll into balls. Add to a parchment lined baking sheet & press down with a fork, creating a classic “criss cross” shape.
Place the baking dish in the oven & cook for 8-10 mins.
Meanwhile, add the chocolate chips & a little bit of coconut oil to a bowl & melt in the microwave.
Once the cookies are baked, dip them in the bowl of chocolate & sprinkle with some sea salt.
Store the cookies in the fridge to prevent the chocolate from melting.

I like to heat up the tortilla on a pan for a little but be careful with the chickpea flour tortillas as they crisp up hard really fast! Wanted to try them out but I think next time I’ll go back to their other types of tortillas 😬
For the refried black beans, heat them in a pan with some chili powder & salt.
Roast the corn in a toaster oven at 350* for 5-6 mins.

▫️Crispy Tofu
▫️1 Soft Boiled Egg

Cook the ramen according to the package instructions (stove top or microwave).
For the crispy tofu, sauté in some sesame oil, chili powder, smoked Paprika, garlic powder, onion powder, cumin, salt & pepper (literally ALL the seasonings in the world 😂).
Boil a cage free brown egg in some water for 6-7 mins & then immediately transfer to ice cold water.
Add frozen peas to the cooked ramen & garnish with dill & sesame seeds.

🥜 Peanut Butter Crunch Bites

These healthy peanut butter babies only require a few minutes to make & even fewer ingredients to make! These are so much crunchier than I expected & just plain DELICIOUS. And oh, they’re healthy! Literally ate 3 pieces in 20 seconds right after taking my pics...🤫

▫️1/2 cup Peanut Butter (@justins)

▫️3 tbsp Raw Honey

Chocolate Coating-
▫️1/3 cup Dark Chocolate Chunks
▫️1/2 a spoon of Coconut Oil

Start off by pulsing together the dates, peanut butter, vanilla & honey in a food processor.
Using a plastic ziplock, first smash up the cornflakes into tiny pieces, remove, then smash up the peanuts. 
Mix everything in a bowl & then press into a bread baking dish, lined with parchment paper.
Bring a pot of water to a boil & rest a bowl to the top. Add in the chocolate & coconut oil. Mix until all the chocolate has melted.
Pour the melted chocolate into the baking dish.
Top with some more crushed peanuts.
Freeze for at least an hour before cutting into bite size pieces! You won’t be able to eat just one! 🤤

Serve & top with some vanilla Greek Yogurt (@siggisdairy), pecans, walnuts & some cashew butter (@justins).

Seasonings:

Start off by heating up a pan with coconut oil & sautéing the onions, garlic, & ginger for roughly 2-3 mins.
Add in your liquids - crushed tomatoes & milk.
Then add in all your veggies - sweet potato, chickpeas, jalapeño & frozen peas. Then add in all your seasonings. Add lots of it for more flavor! 
Mix & then simmer, covered, for roughly 15 mins. Then add in your spinach & stir for another minute.
I served mine with some of my favorite cauliflower rice (@greengiant) & added in some cilantro as garnish!🌱

Mix all the wet ingredients in a blender to get it nice & frothy. In a mixing bowl, whisk all the dry ingredients together. Make sure to get any chunks out. Pour the wet ingredients into the mixing bowl & mix the batter together. Added in a few chocolate chips.
I used two small pans to cook the pancakes & used a 1/3 measuring cup to pour out the batter. Cook evenly on both sides.
Then, stacks on stacks on stacks!
I topped my stack with strawberries, cacao nibs, & cashew butter.

HAPPY THANKSGIVING 🍁 Here is a Pumpkin Apple Spice Skillet Pie...man that’s a mouthful! 😅 Honestly don’t know what to call this recipe because it has a little bit of everything & it’s absolutely delicious! So my family has never really celebrated Thanksgiving before because they grew up in India & we’ve been vegetarian our whole lives!🌾 It’s usually just an excuse to either vacation or hangout at home. So no grand Thanksgiving feast but I thought I’d be festive & make some pie!🤤

Recipe📝
▫️4 small Granny Smith apples
▫️Coconut Oil (@heb)
▫️Cinnamon
▫️Nutmeg
▫️1/2 cup Walnuts

Wet ingredients-
▫️2 Cage-Free Brown Eggs
▫️1 cup Unsweetened Cashew Milk (@lovemysilk)
▫️1/2 cup Pumpkin Purée

Dry Ingredients-
▫️1 cup Whole Wheat Flour
▫️1 tsp Baking Soda

⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 350°.
Start off by cutting your apples into small cubes. In a pan, sauté the apples in some coconut oil & add in some cinnamon & nutmeg (I just eyeball it). After roughly 5 mins, add in the walnuts & sauté everything together for another 5 mins. Set aside.
In a mixing bowl, add in all the wet ingredients & whisk together.
In the same bowl, add in all the dry ingredients & mix the batter together. Make sure there are no lumps.
Then, in a skillet, add in about 3/4 if the apples & walnuts mixture & spread flat. Pour over the batter.
Cook in the oven for 45 mins.
Once fully baked, add the remaining apples & walnuts to the top. I topped my pie with more walnuts, some pecans, raw almond butter (@maranathanutbutters), & powdered sugar.

▫️1 Cauliflower Crust Pizza (@365bywholefoods)
▫️Eggplant
▫️Delicata Squash
▫️Onion
▫️1 Jalapeño
▫️Small handful of Spinach
▫️2-3 cloves Garlic
▫️Roasted Garlic Pizza Sauce
▫️Shredded Mozzarella Cheese
▫️Seasonings- Avocado Oil, Salt & Pepper, Garlic Powder, Basil, Red Crushed Pepper, Onion Powder

Preheat the oven to 425°.
Cube the eggplant, slice the squash & remove seeds, dice the onions & jalapeños, roughly chop the spinach, & mince the garlic (use however much of the veggies you desire).
In a parchment lined baking sheet, add the eggplant, squash, & onions. Sprinkle them all with a little bit of all the seasonings.
Pop in the oven for roughly 15 mins.
Meanwhile, start adding the pizza sauce to the crust, with a layer of cheese. Add in the garlic, jalapeño, & spinach.
Once the veggies have roasted, add them on top of the pizza. Sprinkle a thin layer of cheese.
Add back to the oven for another 8-10 mins.
Cut into slices & enjoy! 🤤 Spicy spicy!!! 😍
