What you need for 4 servings:
2 poundsĀ baby red potatoes - washed and halved
3-4 tablespoons extra-virgin olive oil
4-6 garlic cloves - finely minced
Salt and cracked black pepper
1/2 cupĀ grated Parmesan cheese
Fresh chopped parsley
1. Preheat oven to 400ā¢ F.
2. Halve potatoes and place in a large bowl.
3. Coat potatoes with garlic and extra-virgin oil. Season with salt and pepper.
4. Then toss the potatoes with Parmesan cheese.
5. Place potatoes on a baking sheet, and roast for 30-35 minutes, turning halfway through. Roast until just tender.
6. Sprinkle on fresh parsley š± and enjoy! āØ
