The perfect birthday meal! Truth is, if I have the option to eat out or make something at home, I will almost always choose to make something myself. I like to control the ingredients and the preparation of my food too much. If you want to head out for sushi, however, I’m your girl. 😉 My husband took me to one of our favorite sushi restaurants this past weekend to celebrate my birthday a little early, and I savored every bite. This meal is right up there with it in my opinion!
Preparation:
•Salmon: salt and pepper both sides. Heat a tablespoon of coconut oil in a pan and let it warm up. Place skin side up for about 3 mins and then flip skin side down for about 4-5 mins. Sometimes I’ll put on the lid to get the center cooking a little faster. This was cooked perfectly medium—super tender. Squeeze with fresh lemon.
•Kale: preheat Oven to 400. Spray kale with olive oil and sprinkle with salt and pepper. Cook for about 12 mins (I like mine a little crispy)
• Last but not least the @eatbanza Wheels-made with chickpeas! My first time trying these and the texture is on point with regular pasta! The taste is unique, but I don’t mind it given that it’s half the carbs and twice the protein of regular pasta! WIN🙌🏻 I tossed with the Greek yogurt/cream cheese/lemon sauce in my highlights. Sprinkle everything with pumpkin seeds and sing yourself a happy birthday indeed🎉

BUTTERNUT SQUASH CASHEW CREAM SAUCE: 2 cups raw cashews (soaked in water overnight) + 2 cups roasted butternut squash (you could also use canned bn squash [that would be much easier], but that’s all I had on hand so I just roasted the squash plain, w/o any seasonings, & blended it into the sauce along w the other ingredients) + juice of 1 lemon + 4 tbsp nutritional yeast + 1 1/2 cup water + s&p.
blend cashews first in food processor until they reach a paste-like texture, then add all of the other ingredients and blend, blend, blend! then mix sauce into your pasta or gnocchi of choice, and add red pepper flakes, garlic salt, more nutritional yeast, etc to top!!!!! and violaaaa you are done.All the brussels sprouts please🙏does anyone else feel like they’re tired all the time these day? I’m blaming the changing weather and shorter days, but I’m also trying to make some small diet changes, like eating more protein. That’s not hard to do as a vegetarian/pretty much vegan but I do find that I need to be more conscious of protein sources. I like to sub regular pasta for chickpea pasta and add hemp hearts or chia seeds to everything. What are your favorite plant protein sources?

Why is everyone so afraid of pasta? 🍝 Well I get it. I want to eat ALL the pasta but usually after I feel bloated and foggy. You may even feel some guilt - hopefully not though. Moderation is key- everything has a place in our diets!

However, it may be a good idea to look for alternatives for a variety of reasons. @eatbanza pasta is PERFECT for that. This pasta is made from chickpeas and is high in protein and lower in carbs- this is awesome NOT because carbs are bad (carbs are amazing and are the reason we are alive), but because protein helps you feel fuller longer AND you no longer have to add a protein to your meal. 
Today I meal prepped a bunch of peppers and onions 🌶 ( sautéed with 1 tbsp of avocado oil, garlic and s&p for about 15 minutes) and thought I’d pair it with some pasta for dinner. YUM. 😛

I’m so satisfied and gave my body a bunch of things it loves/needs- veggies, protein and carbs along with tons of vitamins and minerals. •

I used steamed and pureed butternut squash, but have also tried with her recommended pumpkin purée and both ways, it was tasty as could be 😋 I mixed it in with @eatbanza pasta and served with arugula, roasted delicata squash, and not shown here: chicken apple sausage! This has quickly become a favorite in our household 😍 I 💯 recommend giving it a try!⠀

2 packages of chicken tender strips (13 pieces)
3 limes (2 squeezed juice + 1 sliced on top while cooking)
1/4 cup of avocado oil
1/4 cup organic shredded coconut ***marinate for 3 hours & then bake to perfection

Have you ever Tried Banza Noodles??? They are made out of Chickpeas. I’m super guilty of loving the classic Kraft Mac and Cheese 🧀 but clearly that is not the most healthy option 🤷🏻‍♀️. This Mac and Cheese, was a great option that hit that craving but in a much healthier way. I added @tysonchicken___ 🍗 to up my protein intake and a little EBTB seasoning for even more flavor💥Ya girl could N👏🏽E👏🏽V👏🏽E👏🏽R👏🏽 give up pasta! @eatbanza has totally been my life saver these past few months!
