These zucchini boats not only make a quick meal, but they also work well for meal prepping as well 🥒 They reheat easily in both the oven and microwave and can be used as your main dish or as a side dish to pasta or a protein. So versatile!

Ingredients (serves 2):
2 large zucchini
1 cup tomato sauce
1/2 cup shredded mozzarella

Directions: Preheat oven to 425F and line a baking sheet with parchment paper. Cut zucchini in half, length wise, and scoop out the center. Pour tomato sauce into each half and top with mozzarella cheese. Bake in the oven for approximately 18 minutes until zucchini softens and cheese melts. Enjoy immediately or store for up to 4 days in the fridge! 👩🏻‍🍳
