I love a challenge. So when I tried Just Egg Benedict at Silver Diner awhile back, I knew I would have to try to recreate it at home. I did it! I’m giving you a nice tight shot of it so you can see all of the components of the dish: roasted tomatoes, vegan scrambled eggs, spicy cheese, smokey tempeh bacon pieces, scallions and homemade cheese sauce all topping crusty ciabatta bread. It was delicious! My son gave it a 15 out of 10!
