Totally on a breakfast spree this week 😬 and this BAKED BERRY OATMEAL is definitely another yummy option! 🍓

Full of nutrients and fiber, oats are one of the most nutritious whole-grain foods that a person can consume! Oatmeal is a nutrient-rich food, low in calories, and contains many vitamins minerals. Oats can also help lower cholesterol, stabilize your blood sugar, and the high fiber content promotes good digestive health 👍🏼

This baked oatmeal is just the thing to jumpstart your day! Filling, nutritious, and no refined sugar in sight 🚫

Perfect for meal prep, a quick, healthy snack for the kids, or a fun brunch with family on the weekend ☀️ Makes your house smell amazing with the aroma of cinnamon and berries 😋 and the best part...these oatmeal bars can be eaten hot or cold! 💁🏻‍♀️

What you need:
2 cups rolled oats
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup almond milk
1/2 cup applesauce
1/4 cup maple syrup (agave or honey)
2 tablespoons ground flaxseed
2 teaspoons melted coconut oil
1 teaspoon vanilla extract
1 cup fresh berries + 1/2 cup more for topping (I used strawberries and blueberries)

1. Preheat oven to 375•F. 
2. Combine all ingredients, except the berries, in a large bowl. Stir until combined and gently fold in 1 cup of berries.
3. Pour into a 8×8 square baking pan lined with parchment. Evenly spread oats mixture into the pan and top with remaining berries.
4. Bake for 30-35 minutes or until bars are cooked through and hold their shape.
5. Remove from the oven, cool and then cut!

🤍 This makes 6 servings. I topped mine with even more berries 🍓, some 🍌, and a drizzle of maple syrup ✨
Store leftover bars in the fridge for 5-6 days 🤍
