Ten minute fajitas πΆ
Wow itβs been a busy week! Back to (home)school for the kids, two big exams for me and a complex house sale 15,000km away = π€―
So we needed easy yet nourishing options for the week. Fajitas are a favourite as they are super quick, tasty and provide a great range of nutrients

π₯Avocado for great fats
πΆ Capsicums/ peppers for vit C
π Chicken and beans for protein
π
Tomatoes for lycopene
π₯ Buckwheat wraps for fibre
Tabasco and paprika for TASTE π

ππΌGently fry chicken pieces in a hot pan
ππΌAdd a tin of black beans, sliced onions, peppers, garlic and taco seasoning/ smoked paprika
ππΌ Meanwhile mash an avocado with coriander, lime juice, chopped chilli and Tabasco
ππΌ Chop tomatoes, crunchy lettuce and coriander for garnishing ππΌ Heat buckwheat wraps (I used pre-bought this week as, you know, no time π€·π»ββοΈ)
ππΌ Once the chicken is cooked and the veggies have softened (under 10 mins) serve in the wraps
ππΌ Optional extras: grated cheese, sour cream or tomato salsa
