Wow it’s been a busy week! Back to (home)school for the kids, two big exams for me and a complex house sale 15,000km away = 🀯
So we needed easy yet nourishing options for the week. Fajitas are a favourite as they are super quick, tasty and provide a great range of nutrients

🌢 Capsicums/ peppers for vit C
πŸ— Chicken and beans for protein
πŸ… Tomatoes for lycopene
πŸ₯ž Buckwheat wraps for fibre
 Tabasco and paprika for TASTE πŸŽ‰
πŸ‘©πŸ»β€πŸ³
πŸ‘‰πŸΌGently fry chicken pieces in a hot pan
πŸ‘‰πŸΌAdd a tin of black beans, sliced onions, peppers, garlic and taco seasoning/ smoked paprika
πŸ‘‰πŸΌ Meanwhile mash an avocado with coriander, lime juice, chopped chilli and Tabasco
πŸ‘‰πŸΌ Chop tomatoes, crunchy lettuce and coriander for garnishing πŸ‘‰πŸΌ Heat buckwheat wraps (I used pre-bought this week as, you know, no time πŸ€·πŸ»β€β™€οΈ)
πŸ‘‰πŸΌ Once the chicken is cooked and the veggies have softened (under 10 mins) serve in the wraps
πŸ‘‰πŸΌ Optional extras: grated cheese, sour cream or tomato salsa
