Tried my hand at kombucha and *chefs kiss* it’s better than store bought. And we all know that if I can do it, that means anyo⁣ne can.

Kombucha is a fermented, fizzy drink made using a SCOBY or symbiotic culture of bacteria and yeast, tea and sugar. The whole process takes around 8-10 days but little to no real effort is required and the results are wellll worth it.

First you need a SCOBY, which can be bought or you can grow it using raw store bought kombucha. Just place the raw kombucha in a jar, cover the open top with a cloth for 7 days in a warm dark spot and a layer should start to grow. Wait another 3 weeks and you should have enough to start brewing (1/4 inch thick disk). Conversely I can give you some (just slip me a dm gents). ⁣

To make the Kombucha tea I used the detailed instructions from Brewyourbucha.com/learn/- but you can pick any recipe you prefer. (N.B. I didn’t need to buy anything for my brew and received SCOBY from a friend- hi @_arorah 😘)

Once you’ve made your kombucha you can bring out all the bottles you’ve been saving and start pouring. At this stage you can add whatever flavours you want. Blend up fruit, lemons, ginger, spices and add the pulp straight into the bottles. Store in a warm dark space for 2-4 days until flavoured then refrigerate. Make sure you open the bottles every day or two to release any gas that’s building up. Once the flavours have brewed you can strain or leave the pulp. Chill and then they’re good to drink! ⁣

Key notes: ⁣
1. Don’t use tap water - it will likely kill the SCOBY. Always boil first or use filtered/distilled water ⁣
2. Don’t use stainless steel containers/tools, as it may also disturb the SCOBY. Use glass or wood.⁣
3. Once bottled you NEED to burp the bottles. The SCOBY produces carbon dioxide and if the gas isn’t released you’ve effectively made a zerowaste IED.

There you have it. Now go brew that booch, burp those bottles and don’t kill your SCOBY. ⁣
