This banana bread is so therapeutic to make and eat. All you need is a bowl, a spoon and a handful of ingredients. It’s wonderfully moist thanks to the Greek yoghurt and nothing beats a slice of warm banana bread topped with my almond & espresso butter and shards of dark chocolate!

INGREDIENTS:
* 1/3 cup maple syrup
* 1 egg
* 1/4 cup light brown sugar
* 1/2 cup greek yoghurt
* 1 cup mashed overripe bananas (approx. 3 bananas)
* 1 1/2 cups plain flour
* 1 tsp bicarbonate of soda
* 1/2 tsp baking powder

RECIPE:
* Preheat the oven to 175 C
* Line a loaf tin with greaseproof paper
* Stir together the maple syrup, egg, brown sugar, greek yoghurt and mashed banana until well combined
* Fold in the flour, baking powder and bicarbonate of soda
* Pour the batter into the lined loaf tin
* Bake for 50-55 mins (until a toothpick inserted into the centre comes out clean)
* Leave to cool slightly before slicing. It is best served warm with lots of my almond & espresso butter and shards of dark chocolate.
