Asparagus, Mushroom and Pea Gnocchi!
A very quick and easy creamy dinner! (Serves 2)
1. Build your sauce in a bowl by mixing 4 tbsp of low fat creme fraiche with the juice of half a lemon, a tsp of dijon mustard and some black pepper and put this to one side.
2. Finely dice half an onion and half a punnet of baby button mushrooms and fry in a knob of butter until both soften.
3. Take a bunch of asparagus tips and cut them in half, add them to a pan of boiling water and boil for 3 minutes before adding 500g of fresh gnocchi, boil for a further minute and then drain.
4. Add your gnocchi and asparagus to the pan of onions and mushrooms along with 1/2 cup of frozen peas and fry on a high heat for 2 minutes, moving constantly.
5. Add your sauce and stir through for 1 minute, turn off the heat, season and serve.
