There are around 7,500 species of tomato plants around the world. Some types you might be familiar with are cherry, heirloom, grape, truss, san Marzano and roma tomatoes. Not only are tomatoes quite accessible, available and cheap, but they come in a variety of forms – fresh, canned, sundried, sauce, roasted, juice, puree and paste.⁣

💥Nutritionally speaking, tomatoes are rich in an antioxidant called lycopene which gives them the characteristic red colour, as well as being a good source of fibre and vitamin C. ⁣
The amount of lycopene can be influenced by the following: ⁣
▫️ripened tomatoes have a larger amount compared to unripened tomatoes⁣
▫️eating tomatoes with a healthy fat source, like extra virgin olive oil or avocado, boosts the amount of lycopene your body absorbs⁣
▫️cooked tomatoes have more lycopene compared to raw tomatoes ⁣

You will need:⁣
▪️Tomatoes – any shape, size and colour⁣
▪️Sourdough bread⁣
▪️Extra virgin olive oil (1 tbsp)⁣
▪️Caramelised balsamic vinegar (1 tbsp)⁣
▪️Fresh basil leaves ⁣
▪️Salt and Pepper ⁣
▪️Goats cheese (optional)⁣

How to make:⁣
▪️Roughly chop up tomatoes in small pieces and place into a bowl⁣
▪️Add in oil, balsamic vinegar, chopped basil, salt and pepper and mix ⁣
▪️Toast bread, spread on goats cheese and add tomato mixture
