It’s been awhile since I made sweet and sour fish... so yesterday I made this vibrant and incredibly delicious ~~Sweet and Sour Sockeye Salmon with Pineapple~~. The sweet and sour sauce is made with garlic, onion, carrots, 3-colour sweet mini peppers, root ginger, apple cider vinegar, maple syrup, low-sodium soy sauce, and pineapple chunks. Added some chopped scallions and parsley for extra flavour. This is great with white or brown rice. .
