Vegan Gluten Free Raspberry Chocolate Mousse
Almond Flour Pie Crust

1.5 Cups almond flour
1/4 Cup avocado oil
2 tsp agave or honey
1 tsp vanilla extract
½ tsp cinnamon
½ tsp cardamon
Preheat oven to 350
Place all crust ingredients into the food processor and blend. Form into a ball and roll out on an almond flour surface.
Lightly oil a pie tin and bake pie crust for 8-10 minutes.

Chocolate Mousse
12 oz vegan chocolate chips
1 cup coconut milk
1/4 cup coconut cream
1/4 cup framboise (raspberry liqueur)
⠀⠀ Combine chocolate, cream, and coconut milk in a medium bowl and microwave for 1 minute. Stir to blend and then microwave for a minute. Stir until smooth. Stir in framboise.
Pour chocolate filling into pie shell and chill in refrigerator for 2 hours, until firm to the touch.
Top with raspberries, coconut flakes and or nuts of choice.
