QUINOA MUFFIN BITES 
Ingredients:
1 cup cooked quinoa
2 egg whites
1/3 cup chopped spinach 
1/2 cup cheddar or mozzarella cheese 
1/2 tsp. Garlic powder 
Mix warm quinoa with cheese, until cheese melts. Mix remaining ingredients in with cheese and quinoa. Mix until well combined. Spray mini muffin tin. Fill 8 muffin tins evenly with mix. Bake at 350 degrees for 20 minutes. Let cool for 10 minutes before removing from pan.
