MUSHROOM FILLED WITH RICOTTA AND SPINACH

Ingredients:

1 tub (250g) drained ricotta

2 handfulls of baby spinach sliced thick

1 egg

1/4 cup grated parmesan or mozzarella 
6 mushrooms (stalks removed and chopped) large

Cooking method:

Mix ricotta, spinach, egg, mushroom stalks and parmesan gently together.

Place whole mushrooms top side down on a baking tray.

Slice garlic cloves and add to base of whole mushrooms (optional). Add one heaped tablespoon of ricotta mixture to each mushroom.

Sprinkle extra parmesan over the top.

Roast at 180 degrees for 12 minutes until mushrooms are soft and the top is golden brown.

Cool slightly and serve.

pepper, to taste

1 cloves (optional) garlic pinch of chilli or to your liking. Love everything spicy!!!
