Can we just talk about how GOOD pesto is when it’s homemade?! I’m dying over how simple it was to make too and I made it DAIRY FREE! I used @ancientharvest spaghetti noodles and topped it with chicken marinated in Greek seasoning 🤩
Spinach Basil Pesto
1/4 cup pine nuts
3 large garlic cloves
2 big handfuls of fresh spinach
the juice of half a lemon
dash of sea salt
1 1/2 tbsp dried basil
olive oil (start with 1/8 cup then add more to thin the pesto)
1. Combine everything in a food processor and run on medium speed until everything is combined. You’ll have to stop and scrape down sides a few times
2. For those not dairy free, top with parmesan.
