Enchilada Night 😋 I haven’t made these in awhile but they are so simple and easy! 🌮

Ingredients:
•4 cups shredded chicken (I used a rotisserie chicken)
•1 can green chiles •1 can black beans, drained and rinsed
•1 large can enchilada sauce
•1 cup taco cheese
•8 tortillas (whole wheat or flour)

How to:
•Preheat oven to 425.
•While oven is preheating, shred the chicken and rinse the beans. •When the chicken is shredded, mix in the can of green chiles.
•To assemble: Pour 1/4 cup enchilada sauce in the bottom of a baking dish. Place one tortilla down then pour over 1 tbsp enchilada sauce, 2 tbsp black beans, and 1/2 cup of chicken mixture. Roll tightly and place in a baking dish. Continue with the rest of the tortillas.
•When enchiladas are rolled, sprinkle over cheese.
•Bake for 15-20 minutes until bubbly and golden brown 🧀
