My mother, who loves #liverandonions and also has #Venetian ancestry, asked me to make #FegatoallaVeneziana (Venetian Liver and Onions) with #Carciofi al Forno (Baked Gratinéed #Artichokes).
I put my heart and soul into it, and our guests swore it tasted like high-end restaurant cuisine. Very nice, considering I loathe #liver!
My secret: buy the youngest, freshest, most organic calf organs you can find for maximum tenderness, without needing to soak the meat in milk and other unnecessary steps. (Vegans look away.) And don’t skimp on the white wine quality!
