So this dish happened over the weekend as I was throwing myself into the kitchen to keep my mind busy. Pumpkin and spinach brown rice risotto with pulled pork and crackling! While it want quite the fall apart pork I was after, the taste was definitely not lacking and the browb rice have a beautiful robust taste to the risotto over normal arborio rice! .
Was so yummy and so much leftovers for weekly meals 😊😊😊
