All hail the LOADED SALAD BOWL π₯

Lunch today was EPIC (literally, at @epicbar here in town π), but it left me so dang full for most of the day. So come dinner time, I just threw together some stuff leftover in the fridge and voila. π

WHAT WENT DOWN:
β’ romaine (from a local farm)
β’ leftover grilled chicken (seasoned with EVOO + @paleopowder salt free herbed seasoning)
β’ roma tomatoes
β’ peeled/diced cucumbers (Iβve found the peels cause me more digestive discomfort)
β’ @traderjoes butternut squash zig zags, seasoned with their chili lime seasoning and @chosenfoods avocado oil and baked at 450 for 20-25 min
