Sweet Corn Risotto... OMG it’s sooo good!

Super easy recipe! Creamy with sweet corn, wine & cheese? What’s better than this? Maybe make it for Mom this weekend!!😊💕
:
Sweet Corn Risotto * 2 tablespoons olive oil * 2 tablespoons butter
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 cup Arborio rice
* 3 cups chicken broth
* 1 cup white wine
* 1/2 teaspoon kosher salt
* 1/4 teaspoon white pepper
*1 ear fresh sweet corn, cut & scrape kernels from ear * 1/2 cup Parmesan cheese
* 1/4 cup half & half * 2 tablespoons fresh parsley, chopped

•Sauté onions & garlic in olive oil & butter until translucent.
•Add rice & stir to coat with fat.
•Pour in half of broth & wine into rice. Stir, cover and bring to a boil. Reduce to simmer.
•After mixture has absorbed most liquid~10 minutes. Add remaining broth, wine & seasonings. Stir, cover & continue to simmer. •When most liquid is absorbed, stir. Add cheese,  half & half & corn. •Stir well. Turn off heat & cover for 5 minutes.
• Before serving, sprinkle parsley & stir.
•Garnish with extra Parmesan & parsley... Enjoy!!
