Meal prep is something I find a lot of clients struggle with. Most people know what they should be eating, but struggle to make it into a meal. 
Chilli is one of my favourite meals to prep. The reasons for this are; it tastes really fucking good, easy to cool in bulk, doesn’t take long to cook, and gives you a high volume of food for pretty low calories. 
This one I made with turkey mince to increase protein per serving.

Give it a try...
Turkey mince Chilli: (serves 8 portions)
- 2 large onion - 4 Peppers - 500g mushrooms
- 2 garlic cloves
- 1-2 tsp chilli powder
-  1 tsp paprika
- 1 tsp ground cumin
- 1kg turkey mince - 1 beef stock cube
- 2 cans chopped tomatoes
- 2 tbsp tomato purée
- 1 square dark chocolate

Methods:
-Prepare your vegetables. Chop 2 large onions. Cut peppers. Slice mushrooms. Peel and finely chop 2 garlic cloves.
- Start cooking. Put your pan on the hob over a medium heat. Add spray oil and leave it for 1-2 minutes until hot . - Add the onions and cook, stirring fairly frequently, for about 5 minutes, or until the onions are soft, squidgy and slightly translucent. - Brown the 1kg turkey mince. Turn the heat up a bit, add the meat to the pan and break it up with your spoon or spatula. The mix should sizzle a bit when you add the mince. Keep stirring and prodding for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
- Tip in the garlic, peppers, mushrooms, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, 1 tsp paprika and 1 tsp ground cumin. Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
- Making the sauce. Crumble 1 beef stock into mix. Open 2 cans of chopped tomatoes and add these as well. Squirt in about 2 tbsp tomato purée and stir the sauce well.
- cook on low for 20-30mins
- serve with extra veg, or rice...
