KETO BRAISED SHORT RIBS🍖 OVER CAULIFLOWER MASH😱

That’s what’s so great about #keto. High fat, moderate protein, low carbs. Which is another way of saying I get to eat braised short ribs and *lose weight*🥳

▶️Recipe:◀️
.
💥Get yourself a package of short ribs from any supermarket (plan for 3 ribs per person) .
.
💥Preheat oven to 300F and cover each side of the ribs with a generous helping of kosher salt and fresh ground pepper.
.
💥Next, in a frying pan on high heat🔥, add some olive oil and 1 tbsp of butter.
.
💥Once butter melts, add short ribs
.
💥Be sure to *SEAR* ribs on each side (about 30-60 seconds on each side)
.
💥Once ribs have a beautiful sear on each side, remove ribs from pan and place them off to the side
.
💥Reduce heat🔥 in frying pan and add:
-handful of diced carrots
-handful of diced onions .
-handful of diced celery
-handful of diced baby mushrooms
-3 cloves of fresh minced garlic
.
💥stir for a few minutes until veggies become tender (but not soft) then add:
—1/2 cup of red cooking wine .
—2 tbsp of tomato paste
—8 ounces of chicken (or beef) bone broth
.
💥Let everything mix together until sauce starts to boil and thicken.
.
💥Once it boils, go ahead and add sauce/ veggies into glass Pyrex with seared ribs. Add some fresh thyme on top. Then...
.
💥Cover glass Pyrex with tin foil. Make sure you wrap with several sheets so there aren’t any leaks.
.
💥Place glass Pyrex into oven at 300F for 2 1/2 hours.
.
💥It will be a long wait but trust me, it’s 100% worth it!!

✅PRO TIP✅: Once ribs are done, place them over bed of cauliflower mash. Garnish with sauce and a smidge of parsley. And then?
