My meat free Monday lunch today seemed to get lots of attention on my story, so here’s how I do it for all of you asking! 🌱 It’s so easy & my go to easy, healthy & filling lunch!.
.
-Baked sweet potato, pierced with a few pieces of @creativenature Himalayan salt (Gifted) rubbed with a little olive oil before going in the oven.
-Topped with a turmeric yoghurt dip mixing full fat Greek yogurt, a little squeeze of lemon, some olive oil & ground turmeric.
-Before adding the chickpeas, pan fried for a few minutes in @frylighthq olive oil with cumin, ground coriander, cinnamon & paprika. With some spinach thrown in at the end to wilt!
