🍠 Tex-Mex Stuffed Sweet Potatoes

▫️1 large Sweet Potato, halved lengthwise
▫️Black Beans, canned
▫️Chickpeas, canned
▫️Red Cabbage, sliced
▫️Watermelon Radish, sliced
▫️Fresh Cilantro
▫️Grass-Fed Ghee (@bulletproof)
▫️Spices - Cayenne, Garlic, Chili Powder, Salt & Pepper

Preheat oven to 425°.
Slice your SP in half and lay face down in the oven & roast for 25 mins. Then flip over & roast for another 20-25 mins.
Meanwhile, prep your veggies & rinse your beans.
Once the SP is ready & has cooled for a few mins, use a fork to mix the insides. Add in a little bit of ghee & your desired amount of spices. Mix it all evenly within the SP skins.
Then top with black beans, chickpeas, cabbage, radish & fresh cilantro.
Eat straight out of your SP “bowls”! Make sure to scoop out all the insides 😜
