Mediterranean vegetable bags - I prep enough of these bags to have one per day usually with my lunch. Each bag consists of 1 zucchini, 1/4 red onion, 8 cherry tomatoes, 1/4 of a red, yellow and green capsicum. I vary between grilling and baking them depending on how I feel. Each bag is approximately 400 kJ 🙌
