Getting back on track today with my nutrition and of course having my favorite veggie filled quiche because it’s incredibly filling! I love how easy it is to just chop up some veggies, add some eggs, and throw in the oven! Eating healthy doesn’t have to be hard. I hope everyone is having a great Monday!
Southwestern Veggie Quiche: 2 servings: Each serving equal to 1 lean, 3 green, 1.5 condiments and 1 healthy fat.
Ingredients:
2 cups egg beaters
1 cup or 112gm reduced fat mozzarella cheese
1 cup or 3.1oz broccoli chopped
1 cup or 5.26oz assorted bell pepper chopped
3/4 cup 1.84oz mushroom chopped
1/4 cup 0.79 jalapeño chopped
4 light Swiss laughing cow cheese wedges ( I used two pepper jack and 2 normal light)
1/2 tsp garlic salt
1/2 tsp spicy Mrs. dash seasoning
1/2 tsp onion powder
Directions: preheat oven to 375. Spray baking dish with non stick spray. Mix ingredients all together in a bowl. Pour mixture into prepared pan and bake for 35-45 minutes until golden brown on the edges!
