Do you like fruits in food? đŸŒđŸŽđŸ„­đŸ I know it’s quite many who doesn’t. I like it but I prefer them cold or room tempered on the side, just as in this dish inspired by @portionenundertian - coconut stew with chickpeas and peanuts, so yummy and also cheap and healthy 🙌

Ingredients
1 yellow onion
1 garlic clove
1 tbsp curry powder
1 tbsp oil
400 ml coconut milk
200 g crushed tomatoes
0,5 dl peanut butter
2 tbsp vegetable broth
400 g chickpeas
2 bananas
150 g mango
1 tsp chili flakes
1 pinch cayenne pepper
1 pinch paprika powder
Salt, pepper
0,5 dl salted peanuts
0,5 dl vegan yoghurt
4 servings basmati rice

Directions
1. Cook the rice according to package instructions.
2. Peel and chop onion and garlic. Fry them with curry powder in oil in a skillet over medium heat until soft.
3. Add coconut milk, crushed tomatoes, vegetable broth and peanut butter and let simmer for 10 minutes. Add the chickpeas and the rest of the spices.
4. Add the mango and banana to the stew or serve them cold on the side. Serve with rice, peanuts and vegan yoghurt.
5. Enjoy 🙏
