Y’all, I’m so full - help. 🤰🏼 These “tuna” sandwiches are so easy to make and so YUM. You’re going to be like me and have seconds... okay and thirds 🤪 Try it!
Add to your food processor:
▪️2 cans of chickpeas
▪️1/2 cup vegannaise
▪️2 tbsp mustard
▪️2 tbsp fresh parsley (or 2 tsp dill)
▪️1 tbsp lemon juice
▪️Salt & pepper
Pulse your food processor approx 3 times until the chickpeas have a tuna-like texture. Then place in a large mixing bowl.
Now add to your food processor or chop:
▪️2 celery ribs
▪️1/2 a red onion
▪️Pickles (as many as your heart desires)
Pulse until everything’s chopped up, add to your chickpeas, and VOILA! I add to toasted sourdough and top with avocado, tomato, sprouts, and maybe some more pickles 😬🥒 Enjoy!
