Soy beans are fermented with sea salt, koji and sometimes rice, wheat, oats or other grain. The mixture is fermented for three months to three years. Miso maintains the nervous system, boosts the immune system, aids digestion, maintains healthy glowing skin, protects against radiation, reduces cancer, Improves mood and reduces stress, maintains good bone health, lowers cholesterol and reduces the risk of cardiovascular diseases.
