Here I am at the @marsovinwinery cellar in Malta 🇲🇹 where I sampled some of their sparkling wine.

Marsovin’s Wardija Valley Estate spans 2.1 hectares. Here they grow Chardonnay which is used to make Malta’s only Brut Sparkling wine: Cassar de Malte 🍾

Interestingly, because of Malta’s Mediterranean climate ☀️ the grapes are picked mid-July to ensure they’re still acidic enough! By comparison, Champagne harvested in late-August last year. 🍇🥂

The wine is made using the traditional method (the same as Champagne) and spends 12-24 months maturing on the yeast lees in bottle.
