Minestrone Soup 🍲 ✨

By now everyone’s aware of the polar vortex happening ❄️ The school I work at has been closed the past couple of days because of it, & I can’t think of any better excuse to make a big pot of soup than free time & cold temps 😋 I adapted this recipe from a @madhungry Minestrone recipe (simply google “Lucinda’s Minestrone” for the original), & it was anything but boring - so hearty & flavorful! 🙌🏼 There’s still a lot of winter left, so lots of time to make this yummy meal!!! ❣️

INGREDIENTS (serves 6-8)

3 tbsp olive oil

1 yellow onion, chopped

1 cup chopped carrots 🥕

1 cup chopped celery
_____________________
3 cloves minced garlic
_____________________
2 zucchini, cut into bite sized pieces 🥒
_____________________
1 head cauliflower, broken into florets
_____________________
1 head green cabbage, shredded
_____________________
1 cup green beans cut in 2 in pieces

1 can diced tomatoes w/ Italian seasonings 🥫

6 cups water 💧

3 tsp @betterthanbouillon “no chicken” base (any flavor bouillon paste will work)

1 tsp each salt & pepper, plus more to taste

3 sprigs basil 🌿

1 can kidney beans, drained & rinsed

Cooked pasta (optional) 🍝

Parmesan for topping (I used @followyourheart vegan parm) 🧀
