Vegan red curry π± #veganrecipe

Ingredients:
-3 oignons
-2 zucchinis
-800 ml coconut milk
-Jasmine rice
-400 g cherry tomatoes
- 1 red bell and 1 green bell pepper
-400 g crushed peeled tomatoes in puree
-Curry madras powder
-Green lemon
-Oil
-Coriander
-Salt & pepper

Preparation:
- Cut the onions, zucchini, red & green peppers
- Warm a large pot over medium heat. Once itβs hot, add the oil. Add the onion and stir often, about 5 minutes until the onions have softened and are turning translucent
- Add the coconut milk, the crushed peeled tomatoes in puree and the curry powder to the your pot to medium heat
-Add directly the zucchini, red & green bell peppers.
-Cover for approximately 25 mn
-Meanwhile, cook your jasmine rice
-Add the cherry tomatoes tomatoes 10 minutes before the curry has ended to cook
-Serve in a plate the curry then the rice. Add lemon and coriander #bonappetit
