Gentle Coconut Porridge is our new family fave having eaten it for the first time in Sri Lanka. It is vegan, dairy free and gluten free and is surprisingly un-coconuty in a good way too! Summer style with fresh cherries and mango or Winter style with bananas and raw honey it’s a winner for all ages and sets everyone up for the day. RECIPE for 4 smallish bowls: simmer 1 cup oats (or a combo of oats, barley or quinoa flakes), 1 cup coconut milk (or lite CM) and 1 cup water. Sprinkle in some flaxseed or Chia for an added boost (optional). Cook gently till creamy.
