All I am gonna say is the 2 hours of meal prep I put in the kitchen on Sunday before my trip are totally paying off this week ๐โโ๏ธ Of course I had to make up some sweet treats to be prepared because when the hunger strikes, you donโt want to be around me until food is back in my tank ๐

I throughly enjoyed these grain free almond butter blondies today at a local coffee shop while crankinโ out some work ๐คI also really enjoyed navigating through a new town solo today. Itโs refreshing to meet the locals and find out where the must hit up spots are- no agenda, just letting your intuition guide you. ๐๐ป

Recipe:๐๐ป

3/4 c almond butter
1/4 c coconut oil, melted & cooled
1/4 c pumpkin
3/4 c almond flour
2 scoops collagen
1 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
1/4 c unsweetened applesauce
1 tbsp monk fruit sweetner
1/2 tbsp cinnamon
1/2 bar (or cup) of dark chocolate/ chips

Mix wet + fold in dry, add to parchment lined 8x8 baking dish, add chocolate, bake @ 350 for 15-18 minutes. Cheers!
