I’d been thinking about hash browns in burgers since @groovedalchemy posted about them being on offer at that burger chain we all hate to love.

Back in the day in NZ, that fried chicken restaurant we all hate to love had a Burger Tower that I remember a carb-hungry teenage me enjoying. Also, I’m not gonna lie I’ve been known to pop a hash brown in a sausage McMuffin, so the genius of it isn’t lost I me.

Also, chip butties. Nuff said. Potato in bread. Yum.

So, I’d meant to make a pizza for dinner, uh.... slight mishap, in the my hurry to get to the gym yesterday I, well, I, kinda, sorta neglected to add the yeast to my overnight pizza dough. Came back to it today and we’ll, yeah, it’s just a lump of limp unleavened paste. Damn.

Thinking fast about the ingredients I had, breakfast sandwich came to mind, also, still had potatoes I didn’t use for curry night, boom, burger sorted.

You can see what’s in it from the construction pictures, but hash brown, thick bacon and a fried egg are the important parts. The rest is just sauce or garnish, though sriracha was a nice touch.
