Colorful and delicious! •

The holidays have hit and they hit hard! So, so busy lately but I still find time to squeeze in goodness like this! I’ll be completely honest, after eating this I was so full, I felt like I just downed an entire pizza! It was incredibly filling but also incredibly light. A crisp bed of butter lettuce, topped with chickpeas, grape tomatoes, black olives, artichoke hearts, onions and a light olive oil and balsamic vinaigrette. Full of vitamins, minerals, healthy fats and nutrients our bodies need to power us through the busy holiday season. •

Stay in control this holiday season and prep ahead! It will keep your weeks simple and your meals on point. Salads are a go to. Start with a bed of dark leafy greens, add some protein, throw in some additional delicious veggies (think eating the rainbow) and add some healthy fats.
