🍛 Sweet Potato Chickpea Curry w/ Cauli Rice
⏲ Under 30 mins | Serves 4
Made a cozy curry bowl for dinner tonight 😊 Definitely does not taste the same as much parents’ home cooked food but it’ll have to suffice. Are you guys excited for the holidays⁉️

Bowl Deets👇🏼
▫️1 tbsp Coconut Oil
▫️1/4 medium Onion, chopped
▫️2 cloves Garlic
▫️1 tsp Ginger
▫️1/4 Sweet Potato, cubed
▫️1 can Chickpeas
▫️1 Jalapeño, chopped
▫️Handful of Frozen Peas
▫️Handful of Baby Spinach
▫️1 cup Crushed Tomatoes
▫️1 cup Unsweetened Cashew Milk (@lovemysilk)
Seasonings:
▫️1 tbsp Curry Powder (@wholefoods)
▫️1 tsp Smoked Paprika
▫️1 tsp Turmeric
▫️1/2 tsp Cumin
▫️Salt & Pepper, to taste
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start off by heating up a pan with coconut oil & sautéing the onions, garlic, & ginger for roughly 2-3 mins.
Add in your liquids - crushed tomatoes & milk.
Then add in all your veggies - sweet potato, chickpeas, jalapeño & frozen peas. Then add in all your seasonings. Add lots of it for more flavor! 
Mix & then simmer, covered, for roughly 15 mins. Then add in your spinach & stir for another minute.
I served mine with some of my favorite cauliflower rice (@greengiant) & added in some cilantro as garnish!🌱
