🥜 Criss-Cross Peanut Butter Cookies

Only 5 ingredients required for these babies & they are just oh-so delicious 😋 So easy to make & bake!

Recipe📝
▫️1 cup Peanut Butter (@justins)
▫️3/4 cup Rolled Oats (@bobsredmill)
▫️5 Dates, pre-soaked
▫️1 Cafe-Free Brown Egg
▫️2 tbsp Honey
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Chocolate Coating (optional) -
▫️1/2 cup Chocolate Chips, melted (@enjoylifefoods)
▫️Coconut Oil
▫️Sea Salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 350°.
In a food processor, add in the oats & process until fine & flour-like. Set aside in a bowl. Then add in the dates & pulse until they are evenly chopped. Add the oat flour back in as well as all the remaining ingredients (excluding the “optional” ones).
Then use a 1 tbsp measuring spoon to scoop out the batter & roll into balls. Add to a parchment lined baking sheet & press down with a fork, creating a classic “criss cross” shape.
Place the baking dish in the oven & cook for 8-10 mins.
Meanwhile, add the chocolate chips & a little bit of coconut oil to a bowl & melt in the microwave.
Once the cookies are baked, dip them in the bowl of chocolate & sprinkle with some sea salt.
Store the cookies in the fridge to prevent the chocolate from melting.
