I’ve been on a tofu kick lately (which is different because I never used to eat it before) and I’m actually really loving it! It’s not what everyone thinks of, mushy and gross. I always buy extra firm or super firm and it almost has the same texture as chicken. It’s pretty flavourless so it can be added to anything or marinaded to make it even better. I’ve been loving this Thai tofu stir fry and it’s a client favourite too! So quick to make and I use the tofu marinade as the sauce to make life even easier 👌🏼

In a bowl mix;
- 1/2 cup soy sauce
- 2 tbsp sesame oil - 1 tbsp apple cider vinegar - 1 tbsp maple syrup - 1 tbsp sriracha 
I cut the tofu into cubes and then them sit in the bowl for about 20 minutes. Once I’m ready to add the sauce to the stir fry, I add in 1-2 tbsp of peanut butter and 2 tsp it cornstarch to thicken. This sauce is so versatile and can be used with so many meals 🥢
