Chefs study for 5 years to create this delectable Beijing specialty. ===================================== In this photo I’m in Shanghai enjoying a traditional Peking Duck meal but instead of duck I have salmon skin (my friends ordered the duck pictured). After talking to my Chinese American friend whose family is from Beijing (who is also a pescatarian), she urged me to try just once the Peking Duck in Beijing. She doesn’t eat meat ever but she will eat the Peking Duck in China, it’s her one exception. I took her up on her advice and when I went to Beijing I tried it at a place she recommended. It was like nothing I’ve ever eaten before! It literally melted in my mouth and was crispy, savory, tender, and flakey and it didn’t have a gamey after taste at all! It was definitely worth the experience and I loved all the little veggie toppings, rock sugar and plum sauce they bring out for you to make your roll up!
