Ingredients:
🌱2 large apples
🌱2 cups frozen blueberries
🌱1 cup red quinoa .

Steps:
👩🍳Preheat oven to 350
👩🍳Thinly slice apples & place into pan (I used a loaf pan)
👩🍳Cover apples with frozen blueberries (add more blueberries if needed)
👩🍳Cover pan with foil or lid
👩🍳Place pan in oven
👩🍳In a small-medium pot, add 1 cup red quinoa & 2 cups water; bring to a boil, then simmer for 20 min (till no water remaining)
👩🍳When quinoa is done cooking, take apples and berries out of the oven. 👩🍳Mix the two together & top with chia seeds & cinnamon (if desired).
