🌯 Spicy Sweet Potato Wraps

Decided to try the burger patties I made with some wraps just to change things up! And I absolutely loved it 🤤 These patties are delicious & honestly, they taste good with anything, even by themselves! Give it a try!

▫️1 medium Sweet Potato
▫️1/2 cup Tricolor Quinoa
▫️1/4 cup Green Lentils
▫️1/2 Jalapeño, finely chopped
▫️1 tbsp Whole Wheat Flour (@bobsredmill)
▫️1 tbsp Olive Oil
▫️2 tsp Crushed Red Pepper
▫️1 tsp Chili Powder
▫️1/2 tsp Garlic Powder
▫️1/2 tsp Smoked Paprika
▫️Salt & Pepper
▫️1/2 Cup Panko Breadcrumbs

First, preheat the oven to 425°. Then, wash the sweet potato & poke with a knife. Line a baking sheet with foil & roast in the oven for roughly 45 mins.
Meanwhile, cook the quinoa & lentils in 1 1/2 cups of water.
Once those two things are cooked, in a bowl, mash together the potato & quinoa. Add in the following ingredients- jalapeños, flour, olive oil, & seasonings. At the end, mix in the breadcrumbs.
Using a 1/2 measuring cup, scoop out the mixture & place on a baking dish with a slightly greased parchment paper. Shape into 5 patties. Bake at 350° for roughly 40 mins, flipping halfway.
Store them in the fridge or freezer & heat up in a pan right before eating! 😊

For my wraps, I used the Garden Spinach Wraps by @missionfoodsus. I added some mashed avocado, sautéed spinach, the patties sliced, chopped tomatoes, & some shredded cheese. I then used some parchment paper to wrap it up for easy eating!
